Corporate Restaurant Leader Opens Unique Eatery

Daydreamers Café and Grill of Pinellas County

Chris Wicks spent 34 years in corporate restaurant leadership before deciding that he wanted to take a step back from the corporate world. Five years ago he decided to semi-retire and open a restaurant of his own in Safety Harbor. Daydreamers Café and Grill is a unique breakfast and lunch eatery open Wednesday through Sunday each week.

“Food and serving guests is my passion,” he said. “It’s where my love is and where my heart is. So, you’ve got to live your dream as they say, hence, the name, Daydreamers Café and Grill.”

Although Wicks had spent much of his life in corporate restaurant leadership roles, Wicks found the Florida Small Business Development Center (SBDC) at Pinellas County Economic Development (PCED) to be a helpful resource in navigating his business plan, marketing demographics and social media, and financing. He was paired with Kurt Forster, a business consultant specializing in marketing and strategic planning.

Since working together, Wicks has seen consistent growth throughout the years, including being able to weather the storm and aftereffects of COVID-19 in 2020 and 2021.

“Consistently, trying to maintain a good product, great service, and deliver what the guests are expecting, even amongst those times of COVID-19, was uniquely challenging,” Wicks said of the pandemic. “The social media insight that we were receiving from the SBDC was tremendously helpful and it helped us get through that time.”

Wicks added that the pandemic gave him a unique opportunity to work with the City of Safety Harbor to “really get creative with outside dining.”

Throughout his engagement with the Florida SBDC at PCED, Wicks has gotten guidance in areas from marketing to finance, and even what menu items might work best in the community.

Now, Wicks is considering adding a second location to the mix, and he looks forward to having the Florida SBDC at PCED as a resource throughout the process.

“I will always be reaching out and tapping on Kurt’s shoulder for updates and insights,” he said.

He also encourages other small business owners to utilize the Florida SBDC at PCED to help their businesses grow and succeed.

“Get some historical data of other businesses that may have already tried to venture into what you’re going into,” he said. “Learn from other people’s successes. Learn from other people’s mistakes but reach out to the SBDC to get that information and use them as a resource.”

Man Launches Childhood Dream Into Artisanal BakeryPablo Mardones has always wanted to have his own restaurant. “It’s always been a passion of mine to do food and work in the restaurant business, and always wanted to have a restaurant when I was a kid,” he said.

After growing tired of working corporate hours for someone else, he decided to launch something different to offer St. Petersburg locals a new option with a different kind of culture. Located at 5701 Central Avenue, The Crumb Factory, an artisanal bakery specializing in breakfasts, lunches, breads, and great coffee, was opened in August 2021.

Although Pablo and his wife and business partner, Katie Mardones, thought they had planned well for the launch of their business in 2020, permitting issues stalled the progress of their opening. This led them to reach out to the Florida Small Business Development Center (SBDC) at Pinellas County Economic Development (PCED) for assistance.

“We actually decided to open our business in August of 2020,” Katie said. “It took almost nine months for the permitting process to be complete and we were paying rent that entire time so we racked up quite a bit of debt [while] not being permitted to operate.”

When the permits finally went through, the duo found themselves in more debt than they had planned for, and that debt was high interest. Their Florida SBDC at PCED consultant, Debra Schweikowsky, helped them through the process of restructuring that debt into a lower interest loan. “We are really grateful for Debra’s help,” Katie said. “It’s impacted our operation and it’s impacted the longevity of our business being able to have that debt at a manageable level.”

Pablo says the help from the Florida SBDC at PCED has allowed them to have more room in terms of capital to work on some of the ideas they have, such as expanding bakery hours, obtaining a beer and wine license, and purchasing new equipment to increase their capacity in areas such as wholesaling.

Moving forward, the duo say they look forward to continuing their work with Schweikowsky and the Florida SBDC at PCED. “We plan to use the SBDC going forward in order to continue exploring opportunities for capital for our business to support the growth that we are planning and also to get continuing advice about, for example, banks that can support our business, marketing ideas, and managing employees as we grow our business,” Katie said.

Pablo adds that the business wouldn’t be what it is today without the help and support of the employees that helped them through the opening process. “It’s been a really wonderful experience,” he said. “Without them we really would not be able to do all the things we do.”

To other small business owners, Katie says, “You’re not alone as a small business. It can feel scary but the SBDC has all the expertise that you need to take your business to the next level.”

USF Senior Launches Online Clothing Store

Aidan Lilienthal, a current senior at University of South Florida Muma College of Business, started taking steps late in his freshman year of college to build what is now a successful online clothing store. Growing up, Lilienthal always had an affinity towards design, style, and fashion, and while he was studying in lectures, he dreamed of being an entrepreneur.

He then realized that he didn’t have to wait until graduation to build this dream.

However, Lilienthal needed more than just his skills in design, and this led him to reach out to the Florida Small Business Development Center (SBDC) at University of South Florida (USF). He was able to work with several consultants on various aspects of growing his business.

“I’ve worked with Christine Jaros, who helped me initially with the back end set up of the business and kind of figuring out that brand positioning, who I need to talk to in certain details with a lot of the questions that I didn’t even know to ask initially,” he said.

Lilienthal then worked on financial variables in order to estimate cost for his products.

“I worked with Simplice Essou to initially register my business as well as set up for the Internal Revenue Service and the Florida Department of Revenue, in order to orchestrate taxes,” Lilienthal added. “I also worked closely with him on a lot of Excel documents, a lot of fine-tuning details for those variable costs, fixed costs, the pricing calculators [and] how many units we’re going to need to sell.”

After initially getting his business set up, he worked with the Florida SBDC at USF team on marketing and honing in on his brand.

“I started working with Scott Carpenter, who had told me initially sort of the marketing viewpoints and perspectives that we were looking for, and how to orchestrate those when you get into photo shoots and overall Instagram posting,” he said. “Getting a lot of those marketing details correct and at the right time in order to thrive in business [was important].”

Throughout working with the Florida SBDC at USF, Lilienthal has been able to create a foundation to work on future goals. He plans to utilize the help he has received and the contacts he has made with the Florida SBDC at USF to continue growing his business after graduation.

“My message to other small business owners is to take advantage of the SBDC at USF, which is a great invaluable resource for knowledge, answering your questions, and making you think about the questions you may not even know to ask.”

Tattoo Company Inks a Bright Future in Tarpon Springs

Lisa Adams, owner of Tarpon Springs Tattoo Co., started her business in Tarpon Springs in 2021. Matt Pack, senior artist and manager of the shop, says the town of Tarpon Springs has a lot to offer their unique business.

“It has well-traveled, versatile people,” he said. “So, this is a diverse place that compliments all of our styles.”

Shortly after launching the business, Adams reached out to the Florida Small Business Development Center (SBDC) at Pinellas County Economic Development (PCED) for business assistance.

“The reason I reached out to the SBDC was mainly because this is a different kind of business and I wanted to – not having that experience of running a business this large – I wanted to get the best knowledge that I could,” she said.

She was initially connected with business consultant Debra Schweikowsky. Later, she was also introduced to Kurt Forster, also a business consultant at the center. The duo provided start-up assistance, as well as marketing and financial management guidance to Adams and Pack.

Adams said the guidance from the Florida SBDC at PCED duo has allowed her to, “be more secure in our decisions in running a business and where we want to go with it.”

Pack added, “Working with the SBDC has been comforting and intuitive to our business.”

“Within our first year, our quarters have grown each quarter. We are definitely a good-sized shop in this county. We do more overhead as far as walk-in basis and custom art on a day-to-day basis.”

Tarpon Springs Tattoo Company has a staff of five full-time artists now, with a consistent book of business.

Moving forward, Adams says she intends to continue utilizing the no-cost resource for future endeavors. “We would like to understand the marketing better, and get better at that, as well as financial planning and being able to manage that as well as the day-to-day processes of running a business,” she said.”

She also encourages other business owners to take advantage of the local resource, noting that, “it is very helpful, it’s free, and there are so many things out there in trying to run a business that we all need help with and they are there to help us to do that.”

Maureen Simmons wanted a shift and career change in her life, so she launched her cleaning business in 2019 in Tampa. Her goal is to minimize troubles and maximize a clean environment for her clients and to build strong relationships with her workers.

Simmons has several mentors and after speaking with them about issues with her business plan, contract bidding, how to find clients and long-term growth, she knew she needed some additional assistance. One of her mentors suggested the Florida Small Business Development Center (SBDC) at the University of South Florida as a go-to resource.

Since initially reaching out to the Florida SBDC at USF, Simmons has worked with several business consultants and achieved many of her goals, including business certification and general sales growth.

“They have helped me tremendously with my business plan,” she said. “It was a rough draft and they took it, chopped it up, dissected it, and returned it.”

Business consultant Simplice Essou helped Simmons with research and marketing surveys in the Tampa Bay area to help expand her clientele. She also worked with Eileen Rodriguez, who helped her obtain her woman-owned and minority-owned certifications for her business. She worked with yet another consultant to set up her financial projections and various Excel spreadsheets.

As a result of the assistance received through the Florida SBDC at USF, Simmons was able to earn a contract with the Florida Department of Transportation.

Though COVID-19 was a rough patch for her business and many others, Simmons was able to push through with the continued help of the Florida SBDC at USF.

“Right now we only have three part-time employees,” she said. “My goal is to at least have five, and in May of 2023, at least have ten. I am going to need the SBDC to help me reevaluate and reignite.”

She added, “We need resources, mentors and leadership like the SBDC to implement and instill knowledge and research and educate us on how to catapult and ascend our businesses in 2023.”

Magazine Publisher Navigates Pandemic with Local Assistance

Ten years ago, having already experienced success in the publishing industry via a national car magazine and the Florida Magazine Association, Curt Patterson found himself sitting with the publisher of Boca magazine discussing Boca’s success. Seeking a new opportunity, he decided to launch Patterson Publishing, and The Lakelander magazine, two months later.

“There were no city magazines in Lakeland,” he said. “We were looking for other opportunities and [Boca] caught my attention.” After launching the monthly magazine, the COVID-19 pandemic took hold of the nation and business slowed to a halt.

“We were a business that was dependent upon other businesses advertising,” he said. “Many of these businesses did not even know if they were going to be in business. I had to navigate through that and see if the SBA had any options for financing.”

This led Patterson to reach out to the Florida Small Business Development Center (SBDC) at University of South Florida (USF), where he connected with Simplice Essou, a business consultant specializing in accounting, business planning, and financial management.

“I needed a trusted voice to navigate through COVID. I reached out to Simplice and he helped me understand the PPP program,” Patterson said. “After the PPP ran out, we had to get back to business because there was not going to be anything to sustain our employees. Later we found an SBA loan, which was a great opportunity for us to take a look at our whole financial picture and fix anything that needed to be fixed with the full intent of a healthy business.”

Patterson and his team were able to navigate through the COVID-19 pandemic and get back to creating content with more ease. He says he looks forward to growing the business and continuing to provide a great magazine for the city of Lakeland.

“This is definitely a great resource to help understand how to deal with things, like a national catastrophe like this,” he said. “Even on smaller areas, just on the loan with the Small Business Administration; very helpful.”

General Contractor Builds Business with Local Resource

Thomas Hemingway, a licensed general contractor in Florida, decided to launch his own business in 2016 after working for a large national home builder as a vice president of construction.

“I had an opportunity to launch my own business to pursue some new products that I wanted to have more control over,” he said. “I wanted to be able to offer more than just a paycheck and a pink slip to employees, and that is part of what we offer here.”

Hemingway launched Westcoast Design Build FL, also known as Westcoast Worxx, in 2016. The company specializes in residential remodeling of indoor and outdoor kitchens, as well as cabinetry.

Around 2018, Hemingway took part in a CEO program through CareerSource Suncoast. There, he came across the Florida Small Business Development Center (SBDC) at University of South Florida (USF), and specifically, business consultant Scott Carpenter. Carpenter, based out of the Sarasota Chamber, specializes in public relations, branding and marketing.

“I originally approached him for help capitalizing,” Hemingway said of meeting Carpenter. “When I learned that the strength was in marketing, our direction turned to the marketing side of things. I needed some assistance in entering the market.”

Since then, the duo has met bi-annually to stay on top of Hemingway’s progress and adjust strategy as needed. When the COVID-19 pandemic took hold of the area, Hemingway decided he needed to realign his business and renegotiate product terms and marketing.

Especially after the COVID-19 pandemic, he wanted to realign his business and renegotiate product, terms, and marketing.

“We realized in early 2020 what became later known as supply chain disruptions was impacting us,” he said. “What we used to be able to get between 30 and 60 days were between 24 and 36 weeks, so we realigned with some suppliers.”

As a result, Hemingway says the business is actually in a better position post-COVID because of being able to get product, which allowed Westcoast to keep projects on track and gave them an advantage over competitors. Looking back, Westcoast Design Build FL has come full circle since Hemingway initially started working with the Florida SBDC at USF, and Carpenter.

“Come full circle, we are in our own location now,” he said. “I have seven employees. The marketing is effective. We have plenty of business coming our way. We are looking at expansion, so the opportunity that presents itself right now is strategic planning in growth planning for next year and beyond.”

Moving forward, Hemingway says he’ll continue to rely on the Florida SBDC at USF and Carpenter as his business keeps growing.

“We plan to use the SBDC at USF for some strategic long-term planning,” he said. “We have visions to enter cabinet manufacturing. In order to launch a manufacturing facility here locally, we need to acquire the capital. We also need to backfill orders. We are reaching out to Scott and his team to help us strategize and plan the steps necessary for long-term growth. We are fortunate here in Sarasota and Manatee to have organizations such as the SBDC at USF to reach out to.”

Woman-owned Business a Popping Success

Salty Sisters Gourmet Popcorn of Pinellas County

Lenore Holz spent 10 years running a seasonal lemonade stand before deciding she wanted to shift into a business with a more suitable kitchen and workspace, and a product with a longer shelf life and creative appeal.

“I was fortunate enough to have an opportunity to purchase a popcorn or food truck in the New York area,” she said. “I brought it to Florida and did that for a short time until the opportunity arose to acquire Salty Sisters Gourmet Popcorn.”

She now owns and operates two locations, along with Urban Popcorn Food Truck, allowing for two separate streams of revenue.

Salty Sisters Gourmet Popcorn sells approximately 30 fun and unique flavors at a time, and with its two locations in Treasure Island and Madeira Beach, it has become a staple in Pinellas County.

Knowing that she would need support along the way, Holz reached out to the Florida SBDC at Pinellas County Economic Development for assistance. This allowed her to grow the business with the support of business consultant, Debra Schweikowsky, at no cost.

“I was able to take my business to the next level with the help of Deb at the SBDC at [PCED],” Holz said. “She help me with financing, with marketing, and staffing issues.”

The assistance proved beneficial to the growth of the business.

“Since then, I’ve been able to hire a staff of up to 10 people full-time and part time. Negotiation was key in my recent acquisition of Salty Sisters Gourmet Popcorn. It went a lot smoother. I had a lot of stress and specific questions – big questions and little questions – and Deb was there for all of those matters.”

Like many others, Holz says the business experienced a dip in sales and staffing when the COVID-19 pandemic set in, but that she used that time to gain expertise in running her business more smoothly and nail down some financial aspects of the business.

Now, as she continues her entrepreneurship journey, Holz plans to continue to work with Schweikowsky, to scale her growth. “Debra is helping me refine and of course, increase sales; hone in on my marketing,” Holz said.

She encourages others to also work with organizations like the Florida SBDC at PCED. “Use it,” she said.
“Reach out for help. Don’t be afraid. Make time in your busy schedule. No question is too small or too big it. They are a valuable resource at no charge, and it’s too good not to take advantage of.”

Veteran-Owned Business Grows with Local Assistance

Maurice White, a Veteran working overseas as a government contractor, decided to start his own business when he started his family. In 2015 he created We Go All Places to provide support to expedite logistics, transportation, construction, and contingency support for the day-to-day needs arising from the various companies and units that support the military.

White was looking for assistance in starting the business and acquiring loans, and he knew that the Florida PTAC at the University of South Florida could provide that help. He was eventually connected with Karen Krymski, a procurement specialist who was able to help him sort through contracts and loans. Since 2016, We Go All Places has continued to grow through assistance from various consultants at the Florida Small Business Development Center (SBDC) at University of South Florida, and the Florida PTAC at USF.

Throughout the years, he’s sought assistance in government contracting, market and growth assistance, capital access, business certification, and disaster loan assistance.

In 2020, a new challenge presented itself with the COVID-19 pandemic. White needed additional funding to weather the changes hitting the business as the U.S. Military cut back on spending during this time as well.

“This forced me to get some of the government program loans like the PPP to be able to keep all of our staff actually employed, to be able to maintain the rent,” White said. “COVID-19 has been devastating.”

Even through the slowdown, White was able to gain contracts and continue the work that he was passionate about.

“It really has grown in leaps and bounds,” he said. “By having additional funding, we were actually able to find the goods and services needed to finish the two contracts that we had received with the U.S. Navy.”

Continuing in his journey with We Go All Places, White plans to keep attending webinars, asking questions, and using the Florida PTAC at USF. He has even recommended it when teaching Veteran entrepreneurs how to embark in business.

“They are proven professionals and they know what they are speaking about,” he said. “Sometimes they can reach out farther to the SBA than you could. It’s just a great source of information.”

Electrical Company Sparks Growth with Local Resource

Felix Vega, an experienced electrician in the Northeast Polk County region, decided after eight years of working for some of the biggest electrical companies in Florida, that he wanted to start his own business – Strong Tower Electrical Contractor, LLC of Davenport – and build a legacy. He saw the COVID-19 pandemic as a way to make the shift and become his own boss.

However, he knew having experience in the trade was not enough to grow a successful business. Vega needed a resource that could help him build a flourishing company for his community. He found the Florida Small Business Development Center (SBDC) at the University of South Florida (USF), a resource that could do just that.

“The reason I reached out to the SBDC at USF is because I did not know the right steps that I was supposed to take to open my business,” Vega said.

He communicated his needs in business and finance to business consultant Gregory Manning, an experienced business owner himself. Manning is based at the Lakeland Chamber of Commerce and meets with clients as needed at the Northeast Polk Chamber of Commerce, in Haines City.

The two mapped out the financial plans for the first quarter and Vega was surprised that with Manning’s assistance, success followed at a faster rate than expected.

“Greg helped me with my business plan and financial plan for the first quarter, and we exceeded in the first month,” Vega said.

Although Vega’s business is thriving, he says he will continue to work with the Florida SBDC at USF moving forward, specifically for, “marketing, financial planning, and taxes.”

He also recommends that other small business owners take advantage of the Florida SBDC at USF and all that it has to offer.

“I would encourage any small business to reach out to the SBDC to help them with their business,” Vega said. “They are no cost. They have supported me in growing my business.”

Florida SBDC Network

The Florida SBDC at the University of South Florida is a member of the Florida SBDC Network, a statewide partnership program nationally accredited by the Association of America’s SBDCs and funded in part by the U.S. Small Business Administration, Defense Logistics Agency, State of Florida, and other private and public partners, with the University of West Florida serving as the network’s lead host institution. Florida SBDC services are extended to the public on a nondiscriminatory basis. Language assistance services are available for limited English proficient individuals.
